Milk Kefir and Yogurt

Fermented foods and beverages are an excellent and economical source of probiotics.  And milk kefir and yogurt are no exceptions.

Both kefir and yogurt serve a useful purpose and it is to your advantage to include both of them in your diet.

Both are made from milk and both of them are full of probiotics.

Milk Kefir
  • Kefir is a mesophilic culture which means it cultures at room temperature.
  • Kefir grains are made of up to 20 different kinds of bacteria and yeasts.
  • Kefir grains are added to milk and allowed to culture at room temperature for 24 to 48 hours.
  • Kefir has to be attended to every day by straining the grains and adding fresh milk.
  • Kefir is able to colonize the gut with up to 20 different strains of good bacteria.
  • Kefir is a liquid drink, although by straining the whey it can be made into a cheese.
  • Kefir is tangier than yogurt.
  • Kefir contains certain strains of healthy bacteria that are not present in yogurt.

  • Pasteurized whole milk is good.
  • Organic, pasteurized whole milk is better.
  • Raw whole milk is best.
  • Goat’s milk, either pastured (better) or raw (best).
